A Different Sort of Crisp


Have I mentioned that this has been the summer of crisps (or crumbs or crumbles- not even sure what the difference is)?

I've baked a strawberry rhubarb crumble, blueberry crumble and apple crisp.

And then I saw this recipe for Savory Tomato Crisp.


I was like, "You mean I can put veggies and salty stuff under a crisp, oat covering."

And the recipe was like, "Yes, you can, and it will be delicious!"

If recipes could talk, that is.


Either way, this is a great dish to shake up your dinner routine and once again use those red, orange, striped and spotted beauties of fresh tomatoes.

And you can make this recipe in a large, family-style pan or cute, little individual ramekins.


Just make sure after you take these out of the oven that you let them sit for a few minutes or the tomatoes will be like hot lava in your mouth.
