Simple Saturday: Kale Salad


Well hello, weekend.

Hello sleeping in late.

Hello celebrating the summer's best ruby red and misshapen tomatoes with BLTs loaded with crisp, salty bacon.

Hello balancing that bacon overload with banana, soy milk and almond butter smoothies.

This Simple Saturday, I'm sharing a throw-together, easy kale salad recipe that's perfect for a weekend lunch or dinner when you're looking for a health cleanse and pick-me-up.


So, we all love kale, right?! I certainly hope so.

If you haven't jumped on the kale bandwagon yet, please do, as soon as possible!

Kale's earthy savoriness and crunch really come out when it's sauteed or made into chips, but it's also a fantastic salad green.

Like a lot of us, it just needs a little massage.

No spa treatment needed, just a little massage of olive oil and lemon juice to soften it up a bit. We all, kale included, need a little TLC.


Here's how you make your kale salad:
1. Rip pieces of the kale off of the stem and rinse thoroughly. Dry your kale and add some olive oil, a squeeze of lemon juice and some sea salt to it in a bowl.

2. Using your fingers, massage the oil and lemon juice into the kale leaves until well coated and the leaves start to soften, for about 30 seconds to a minute. Then let the kale hang out for a few minutes.

3. Next, throw in whatever salad add-ins you have laying around like cherry tomatoes, carrots, onion, etc. and a few splashes of red wine vinegar to make your own salad dressing.
