Counting Beans Doesn't Have to be Boring


I've been doing a lot of budgeting lately.

And I've actually enjoyed it.

I think it's fun figuring out the cheapest way to cook meals and make leftovers last for a few days. I think the challenge of not just eating out every day makes life much better (also cheaper) and healthier.

Booya!

Lately we have been eating a lot of black beans in our meals because they're such a cheap, easy and tasty protein.



I buy a 1 lb. bag of dried black beans, soak them overnight and simmer for a few hours with lots of spices (like salt, garlic powder and cumin) and I'm left with like two weeks worth of tasty black beans!


Here's one of the ways that I use these beans to make a really cheap and super flavorful lunch or dinner.

Towering Black Bean Tostadas are fun to put together and can utilize almost any topping that you have in the fridge to create a creamy, crunchy meal. Throw some cheese on there, spice it up with some crunchy red onion and make it super creamy with fresh avocado.

Just think of it like a giant nacho. Who doesn't love a giant nacho?!


The combinations could stretch to the moon...or as far as your tex mex imagination will go.
