My husband and I love curry.
My husband is more of a curry lover than maybe even I am.
So, we really enjoyed this fun twist on butternut squash soup with the addition of curry powder and coconut milk.
I highly recommend it on a fall or winter day when you feel like traveling to a new place with your food. I also recommend topping your bowl of soup with a dollop of Greek yogurt or sour cream for extra creaminess.
