Simple Saturday: Breakfast


It's time to talk about breakfast.

Now, this meal should not just be a weekend, Simple Saturday thing, although isn't a big, special breakfast on a weekend morning just the best?!

Anyway, breakfast is a meal that is often forgotten, left to the last minute and sometimes even ignored! How dare us?

This meal can help us start out our day right and can be a simple way to make the rest of the day go smoothly.

Here are some simple breakfast ideas to get the wheels of your breakfast brain turning:


1. Peanut Butter, Honey, Banana Toast
There really isn't much to this breakfast concoction but it's packed with protein and will keep your tummy full for awhile.

Here's how you make it: Toast a piece of wheat bread, add a nice layer of peanut butter (I prefer natural pb, but use whatever you like), cut up some banana slices then finish with a drizzle of honey for sweetness.

2. Avocado Toast
I made this for my first Simple Saturday and it's really great for any meal of the day. It's flavorful and has a lovely mix of textures and colors!

3. Soft-boiled Egg
I learned to love this old-school egg preparation during my recent trip to Burma. These eggs are really easy and fun to eat and only take a little over 5 minutes to prepare. And eating one will totally make you feel like you're in I Love Lucy or Downton Abbey!

Here's how you make it: Fill a saucepan halfway up with water and bring to a boil. Then throw your egg(s) in (gently) and turn the heat down to medium or so where it's simmering. Simmer for 5 minutes, take it out and let it rest for another few minutes. Then, crack with a knife, add a little salt and pepper and enjoy with some buttered toast.


4. Granola
I have a great Cinnamon Almond Granola recipe that I shared with you back in August. It's one of my favorite breakfast options, whether it's eaten by itself or with milk or yogurt.

5. Greek Yogurt
This is by far the easiest on-the-go breakfast. Just grab a mini tub or a bowl of your favorite Greek yogurt and enjoy. Top with granola, honey or dried fruit if you wish.


Give breakfast a fighting chance...you won't regret it!
