Dinner is Served


If you're like me, when you get home from work, you're already super hungry and ready to get a quick, home-cooked meal on the table.

It's really rare that I ever cook a meal that takes longer than 30 or 40 minutes from start to finish, unless it's on the weekend and I have more time.

This dish is the epitome of easy, filling, fresh and healthy cooking.


It uses farro, a fabulous, wheat-like grain with a nice chew. And it really goes great with anything: cold salads, as a pasta substitute and even in risotto.


For this recipe from Smitten Kitchen, you take your farro and throw it together in one pan (yes, just one) with onions, garlic, olive oil and those lovely cherry tomatoes that you picked up at the farmers market.


Then, these ingredients simmer away for 30 minutes until they are infused with flavor and taste like an all-day cooked Italian meal.


Top it off with some Parmesan and/or goat cheese and fresh basil and dinner is served!
