Simple Saturday: Tzatziki
Can one even express how delicious Greek food is?
The salty olives, the crumbly feta, the garlic, the falafel, the warm seasonings, the thick-as-sour-cream yogurt topped with sweet honey.
I could go on.
Although one of my favorite fast food meals is the Greek salad from our local place, Kosmos, Greek food is simple to make at home, too.
And you can't make Greek food, without making tzatziki.
If you don't know what I'm talking about, it's that creamy yogurt, cucumber and garlic sauce that's probably on all of your Greek favorites.
And tzatziki is today's Simple Saturday because it can be whipped up in under a minute and spread on just about everything (from falafel to salads to pita and even Greek pizza.)
Here's how you make it:
1. Combine 1 cup of plain yogurt, 1 clove of garlic minced, a squeeze of lemon juice and 1/2 of a cucumber (chopped into large chunks) in your food processor.
2. Mix until combined evenly and add salt and pepper (and dill if you have it) to taste.
The GREAT thing about this quick tzatziki is you don't have to grate the cucumber for 5 minutes and risk grating your skin/nails in the process. You just chop it into chunks and throw it in to let the food processor do the work.

I've never made tzatziki before...didn't know it was this easy. So, I'm adding a cucumber to my shopping list(:
