Pork...In Moderation

You're all in for a treat today.

Because this mostly vegetarian, sweet-toothed food blogger is giving you a kickin' pork tenderloin recipe!

Again, I am not a huge meat eater, but after tasting this sweet, savory and tender pork tenderloin, I was definitely glad that I still eat meat on occasion and in moderation.

I made this pork (my first time to cook pork and to sear a piece of meat) for my wonderful husband's birthday dinner.

It is so simple to make and combines some amazing flavors. First, you rub the pork with a rosemary-filled mixture of oil, salt, pepper and garlic. Then, after searing and cooking the pork in the oven for a bit, you slather it in a sweet apricot (and more garlic) sauce!

It cooks to juicy perfection and gives a pow of flavor to your plate!
