Craving Cookies?

A few weeks ago when we were decorating our little apartment with lights and garlands and getting in the Christmas spirit, I got a craving for a delicious cookie.

And I didn't turn to the usual chocolate chip or rich, fudgy brownie that I usual depend on.

I was specifically craving an oatey, coconuty, crispy cookie.

And this recipe for Coconut Oatmeal Chewies from Mel's Kitchen Cafe absolutely hit the spot.

These cookies, which I just call cookies instead of chewies, are crispy and oh so blissfully simple.

There's sweet, texturized coconut, earthy oats married with a good helping of two kinds of sugar and butter.

This is the perfect cookie to throw together for company, a party or if you just have a craving for a simply delicious and comforting treat.

They are especially yummy when paired with a cold glass of milk, Christmas decorating and holiday cheer!

  1. These sound amazing! There's a mild hatred among the other members of my house for all things coconut, but I may have to make a batch of these just for me! :)
