One Vote for Breakfast



Today is Election Day...bum, bum buuuum (cue scary sound effects).

I voted early a few weeks ago but really enjoyed following election tweets and such today at work.

Also, I'm very thankful that I no longer work at a newspaper because election night was crazy and super late there.

I'm excited to see what happens, but in the mean time I would like to share a fantastic and healthy banana bread.



Usually I'm not very concerned with how much butter or sugar is in my recipes (the really rich ones are usually a treat anyway), but when I found this recipe I got really excited about it's health possibilities!

So, I'm putting in my vote for this healthy banana bread.


You get to make your own flour (pretty cool, right) out of food processing oats then mix it with bananas, brown sugar, olive oil and some other good stuff.

And if you don't have enough bananas, you can substitue apple sauce for one of them.

Then you mix in some chocolate chips and throw some more brown sugar and oatmeal on the top and let it bake until it's soft and delicious.


And this tasty breakfast treat can be gluten free, if you use gluten free oats, and vegan, too, if you want to use vegan chocolate chips.

This is definitely one of my favorite banana breads of all time and the little melted chocolate nuggets make it so rich without being heavy.

This is my vote for a healthful breakfast that starts my day off in banana-oat-chocolate bliss.
